Our story
Slow dough. Quick service.
We started The Pastry Lab in 2019 with one rule: nothing leaves the kitchen we wouldn't eat ourselves. Five years on, that still means croissants laminated by hand, sourdough proved for 36 hours, and coffee from beans roasted in Brisbane the week before.
The queue tells us we are doing it right. The pickup order system means you don't have to stand in it.
